Our Heather Honey from one of the forests heaths is the one people really remember. The particular heath its was created by the Roman’s in circa 100AD and the landscape has hardly changed since. The heathland is now famously a Site of Special Scientific Interest while being as classed as highly endangered and under threat due to the British Isles losing circa 85% of it’s lowland heath over the last two centuries. Hence, what you’re getting here is something special.

The flavour of the honey is generally both rich and dark, while being nicely, maybe some may say, intensely, aromatic, while carrying a distinctive woody yet floral flavour, together with warming notes of probably toffee and butterscotch.  The honey’s aroma great, it’s wild and resinous straight from the heather, symbolising the wildness of the heath and everything it has seen over the last two thousand years or so. Other honeys just don’t have this. All in all, our heather honey, it’s a true, albeit rare, British classic.

Pop it on toast, fold it into yoghurt, (works a treat on Shreddies partially submerged in a nice cold, organic milk, topped with a sprinkling of bee pollen) or just spoon it straight from the jar. It can work next level with both cheeses and cold meats. It is not a mild honey. It is not meant to be. If you already know our runny wildflower based honeys, this is the darker, more serious member of the family.
